Description

These delicate, cream-enriched madeleines are a delightful treat, perfect with tea or as a light dessert.


Ingredients

* ½ cup (113g) unsalted butter, melted and cooled

* 1 cup (200g) granulated sugar

* 2 large eggs

* 1 teaspoon pure vanilla extract

* 1 ¼ cups (150g) all-purpose flour

* ½ teaspoon baking powder

* ¼ teaspoon salt

* ¼ cup (60ml) heavy cream


Instructions

1. Whisk together melted butter and sugar.

2. Add eggs one at a time, then vanilla.

3. Whisk dry ingredients (flour, baking powder, salt) separately.

4. Gradually add dry to wet, mix gently.

5. Fold in heavy cream until smooth.

6. Chill batter for at least 1 hour (or overnight).

7. Preheat oven to 400°F (200°C). Grease and flour madeleine pan.

8. Fill molds ¾ full.

9. Bake 10-12 minutes, until golden.

10. Cool briefly in pan, then transfer to wire rack.

Notes

For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute coconut milk for cream and coconut oil for butter. Add lemon zest, almond extract, or mini chocolate chips for flavor variations.
