Ingredients
1 cup quinoa, uncooked
2 cups chicken broth (low sodium)
1 pound boneless, skinless chicken breasts
1 tablespoon olive oil
1 red bell pepper, chopped
1/2 red onion, chopped
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, halved
1/4 cup crumbled feta cheese
2 tablespoons lemon juice
1 tablespoon chopped fresh oregano
Salt and pepper to taste
Instructions
1. Cook the Quinoa: Rinse the quinoa in a fine-mesh sieve. In a medium saucepan, combine the quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and the quinoa is fluffy. Fluff with a fork and set aside.
2. Cook the Chicken: While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6-8 minutes, or until cooked through and lightly browned. Season with salt and pepper.
3. Sauté the Vegetables: Add the chopped red bell pepper and red onion to the skillet with the chicken. Cook for 5 minutes, or until the vegetables are slightly softened.
4. Combine Ingredients: In a large bowl, combine the cooked quinoa, cooked chicken and vegetables, halved cherry tomatoes, Kalamata olives, and feta cheese.
5. Dress the Bowl: In a small bowl, whisk together the lemon juice and oregano. Pour the dressing over the quinoa bowl and toss gently to combine.
6. Serve: Serve immediately or chill for later. Enjoy this satisfying and healthy bowl!
Notes
Feel free to substitute other vegetables like zucchini or cucumber. You can also use different types of cheese, like goat cheese. Add a pinch of red pepper flakes to the chicken for a little heat. Try using fresh basil or parsley instead of oregano. Substitute chickpeas for chicken for a vegetarian option.
